Apple Walnut Upside Down Cake

Making an upside down cake is one of the easiest desserts to make. This recipe is an instant fall classic, blending fresh apples, crushed walnuts in light fluffy cake with a sweet whiskey glaze.

- Preheat Oven to 350°F
- Line the bottom of your Cast Iron Skillet with parchment paper.
- In a mixing bowl, blend 1/2 stick of butter, brown sugar, and a pinch of Kosher salt. Spread the mix covering the bottom of the skillet.
- Peel and slice apples in 1/16th inch slices. Arrange in circle on top of Brown Sugar mixture. Take remaining apples, and rough dice in to small pieces. Set aside.
- Crush Walnuts, reserve with apples.
- Reuse the same mixing bowl, and combine flour, sugar, baking powder and salt.
- Mix eggs, heavy cream, vanilla bean paste, 1/2 Cup whiskey, and butter. (Be sure to melt the butter first)
- Combine wet ingredients with dry and whisk, ensuring there are no lumps.
- Fold in remaining apples and walnuts you reserved.
- Pour batter over apple slices into cast iron skillet. Bake in the oven for 60 minutes, or until an inserted toothpick comes out clean.
- Remove from oven and let cool for at least 30 minutes.
- GLAZE: Combine remaining whiskey, confectioner's sugar and milk. Whisk until completely smooth.
- Run a knife around the edge of cake, and using a large plate, invert cake onto plate. Remove parchment paper if sticking to cake, and pour glaze into center allowing it to run to the edges of the cake.
- Serve when ready!
Sulli Says: I prefer this cake in a cast iron skillet because you get a beautiful golden crust at the edges, but the inside is so fluffy and soft. It's a texture thing that you don't really get a with a cake pan. You can definitely use a cake pan if you prefer and your cake will be just as delicious.
