Beer Battered Fish

Prep Time: 10 min. Cook Time: 10 min.
Battered in beer and deep fried, it doesn’t get much better for a fish than this! Just make sure you have extra beer on hand while you’re cooking. To the chef go the spoils, right?
Ingredients
  • 2 quarts vegetable oil (for frying)
  • 8 cod fish fillets (4 ounce)
  • 1 Cup AP Flour
  • 2 Tbsp. Granulated Garlic
  • 2 Tbsp. Paprika
  • 2 Tsp. salt
  • 2 Tsp. Black Pepper
  • 1 Egg, beaten
  • 1 bottle beer (12 ounce) - preferably an Amber. If you can get Abita, it’s the best for this recipe.
  • 2 oz. Club Soda
  • 2 Tsp. White Pepper
Directions
  1. Heat oil in a deep fryer to 365 degrees F (185 degrees C).
  2. Rinse fish, pat dry, and season with salt and pepper.
  3. Combine flour, garlic powder, paprika, 2 teaspoons salt, and 2 teaspoons pepper, and white pepper. Stir egg into dry ingredients.
  4. Gradually mix in one beer until a thin batter is formed. Sub 2-4 oz club soda, reduce beer amount.
  5. You should be able to see the fish through the batter after it has been dipped.
  6. Dip fish fillets into the batter, then drop one at a time into hot oil.
  7. Fry fish, turning once, until both sides are golden brown.
  8. Drain on paper towels, and serve warm.
