Chorizo Baked Beans

Prep Time: 30 min.   Cook Time: 30 min.
Once you make these baked beans with fresh cannellini beans you’ll never go back. Be sure to strain any extra moisture From the beans that could water down your dish.
Ingredients

​Coffee BBQ Sauce
  • 2 Tbsp olive oil
  • 4 tsp garlic, chopped
  • 1/2 Cup Spanish onion, diced
  • 2 tsp chili powder
  • 2 tsp smoked paprika
  • 4 Tbsp Bourbon
  • 21 Tbsp dark brown sugar
  • 6 Tbsp molasses
  • 2 Tbsp chipotle pepper in adobo sauce, drained, chopped
  • 1 Cup fresh brewed coffee
  • 11 Cups ketchup
  • 1 Tbsp lime juice, fresh (Optional)
  • 1 tsp kosher salt
​Baked Beans
  • 2 Tbsp olive oil
  • 12 oz. cooked chorizo sausage links, crumbled or diced
  • 2/3 Cup carrots, 1/2 - inch dice
  • 1 Cup Spanish onions, 1/2 - inch dice
  • 4 cannellini beans, drained, rinsed (16 - oz.)
  • 1 Cup chicken stock
  • 2 Tbsp light brown sugar
  • 2 Tbsp Bourbon
  • Salt and black pepper, as needed
Directions
  1. Sauté onions and garlic in olive oil over medium heat until soft. Add paprika and chili powder; sauté until blended
  2. Deglaze pan with Bourbon; stirring frequently, simmer until liquid is reduced by half.
  3. Add brown sugar and stir until sugar is melted. Add molasses, chipotle pepper and coffee; simmer over medium-low heat until liquid is reduced by half.
  4. Add ketchup and simmer over low heat for about 20 minutes or until flavors meld and sauce has reduced; blend with a stick immersion blender until smooth, or a regular blender if that’s what you have.
  5. Add lime juice; season to taste with salt. Reserve.
  6. Heat olive oil in large skillet over medium heat.
  7. Add diced chorizo, onion and carrots; sauté until lightly browned.
  8. Add cannellini beans and continue sautéing for 1 minute.
  9. Add reserved coffee, chicken stock, brown sugar and bourbon; slowly simmer for 15 to 20 minutes, stirring frequently.
  10. Season to taste with salt and pepper.
  11. Serve hot. Makes approximately 12 servings.
Sulli Says: add 4-5 cored, peeled and diced apples with the sausage and beans, to give these beans an extra twist.
