Coconut Rice

Easy to make. Mildly sweet sticky coconut rice pairs well with bold or spicy flavors. The cinnamon gives a different flavor and an amazing aroma, but doesn't overpower the rice at all. Its a well balanced complement to any dish, and a creative way to jazz up plain rice.

- Rinse rice in a strainer until water runs clear to remove dirt and grit.
- Add all the ingredients to a pot, whisking to combine.
- Bring to a boil
- Reduce heat to low and cover. Simmer for 20 minutes.
- Remove from heat. DO NOT REMOVE lid yet. Wait 5 minutes.
- Remove lid, and remove cinnamon stick. Fluff rice with a fork.
- Serve immediately
