Cornmeal Waffles

Sometimes, those “use what you have situations”... turn into something comforting and delicious. So I took an affordable staple of my childhood and tried to turn it up. So without enough flour in the pantry, I opted for cornmeal. You're going to love this break from the ordinary waffle that can be savory or sweet.

Directions
- In a large mixing bowl, combine dry ingredients.
- In a medium mixing bowl or large measuring cup, combine wet ingredients
- Make a well in the middle of your dry ingredients and pour in your wet ingredients.
- Gently whisk to combine.
- Pour 1/3 to 1/2 Cup batter into waffle maker (this will depend on the type and style you have).
- Cook until golden brown, roughly when large amounts of steam have stopped escaping the waffle maker.
- Serve with butter and syrup or top with your favorite toppings!
Sulli Says: If you're looking for a more traditional waffle recipe, just replace the cornmeal with a cup of AP flour!
