Cornmeal Waffles

Sometimes, those “use what you have situations”... turn into something comforting and delicious. So I took an affordable staple of my childhood and tried to turn it up. So without enough flour in the pantry, I opted for cornmeal.  You're going to love this break from the ordinary waffle that can be savory or sweet.
Ingredients
  • 1 Cup AP Flor
  • 1 Cup Yellow Cornmeal
  • 2 Cups Milk
  • 1/2 Cup Soda Water or Club Soda (optional)
  • 2 Eggs
  • 5 Tbsp. Melted Butter
  • 3 Tbsp. Sugar
  • 2 Tsp. Baking Powder
  • 1 Tsp. Baking Soda
  • 1 Tsp. Kosher Salt
  • 1/2 Tsp. Cinnamon
  • 1 Tsp. Vanilla Bean Paste
Directions
  1. In a large mixing bowl, combine dry ingredients.
  2. In a medium mixing bowl or large measuring cup, combine wet ingredients
  3. Make a well in the middle of your dry ingredients and pour in your wet ingredients.
  4. Gently whisk to combine.
  5. Pour 1/3 to 1/2 Cup batter into waffle maker (this will depend on the type and style you have).
  6. Cook until golden brown, roughly when large amounts of steam have stopped escaping the waffle maker.
  7. Serve with butter and syrup or top with your favorite toppings!

Sulli Says: If you're looking for a more traditional waffle recipe, just replace the cornmeal with a cup of AP flour!
