Hot Spiced Chicken Wings

These wings are loaded with flavor and packed with spice. If you ever wondered how your favorite Asian restaurant makes these crispy, spicy, golden wings, here’s how they did it. And now you can make them anytime you like.

- Divide wings into drummies, flats, and tips. DO NOT discard the tips, they have awesome flavor when cooked.
- In a large Dutch oven heat 2 inches of oil, over medium heat, until it reaches 300°F degrees. (Use a candy thermometer like this one: here).
- Fry the wings 3-5 minutes, in batches until the skin is opaque. THEY WILL NOT BE COOKED THROUGH YET.
- Remove wings to a large bowl and toss with a generous amount of salt. Next, place the wings on a baking sheet or heat safe tray and place in the freezer for a minimum of 3 hours and up to one day.
- When you're ready to serve (remember the wings need to be in the freezer for 3 hours minimum) preheat the oven to 400°F. Place the dried chilies, red pepper, peppercorns, cumin and star anise on a baking sheet and toast in the oven for 3 to 5 minutes so they become fragrant. Set chilies aside. In a coffee grinder, food processor, or using a mortar, grind spices into a powder. Slice ginger thinly and set aside. Repeat with green onion if you plan to include it.
- In a large Dutch oven heat oil to 350°F, fry wings for 6 to 7 minutes until golden brown. Because you'll have to fry in batches, as wings are done place in a large bowl sprinkle with salt and 1 Tsp. of the seasoning blend you made.
- When all of the wings have been cooked, combine chilies, ginger, remaining spices, and 1 Tbsp. of the hot cooking oil in a bowl. Pour over chicken, making sure to cover every wing.
- Serve immediately.
Sulli Says: Try this with shrimp, leaving the shells on while cooking and coating. The much shorter cooking time means you can indulge even quicker!
