Maple Breakfast Chicken Sausage

Serves: 14-16 patties
Prep Time: 10 min. Cook Time: 10 min.
I could never find a chicken sausage I liked, so I set out to create one.  Full of sage, and a kiss of real maple syrup, this one is a winner. 
Ingredients
  • 2 Lbs. Ground Chicken
  • 3 Tbs. Maple Syrup
  • 2 Tsp. Himalayan Pink Salt
  • 1 Tbsp. Rubbed Sage
  • 1 1/2 Tsp. Dried Parsley
  • 1 Tsp. Garlic Powder
  • 1 Tsp. Onion Powder
  • 1 Tsp. Black Pepper
  • 1/2 Tsp. Dried Thyme
  • 1/4 Tsp. Red Pepper Flakes
  • 1/4 Tsp. Ground Nutmeg
  • 1 Tbsp. Smoked Brown Sugar (Regular Brown Sugar is great too!)
Directions
  1. In a large mixing bowl, combine all the ingredients.
  2. Mix until all combine, but be careful now to overwork the ground chicken.
  3. Form 2-3 oz. patties.
  4. In a lightly oiled cast iron skillet on medium high heat, brown patties flipping once after about 7 minutes. 
  5. continue cooking until cooked through. (About 7-8 minutes)
  6. Serve immediately
