Pineapple Guacamole

Serves: 6 
Prep Time: 15 min.  Cook Time: 5 min.
Guacamole seems to be that one thing that sets off tacos, nachos and burritos.  Good guac is amazing, bad guac is guac you have to pay extra for.  Follow this recipe and you'll never have to pay extra for guacamole again!
Ingredients
  • 3 Avacados (The more ripe the better)
  • 1 Poblano Pepper, finely chopped
  • 2 Shallots, finely diced
  • 3/4 Cup Crushed Pineapple
  • 1/2 Lime (Juiced)
  • 1/3 Cup fresh Cilantro, finely chopped (avoid stems)
  • Pinch of Kosher Salt
  • 1/2 Tsp. Cumin

Directions
  1. In a mixing bowl, mash avacados until there are small chunks remaining.
  2. Add poblano, shallots, pineapple, lime juice, cilantro, salt and cumin.
  3. Mix until all ingredients are combined.
  4. Taste! And then adjust to your taste, add more poblanos if you want a spicier mix, more lime and cilantro for more tang.  And always add more salt if your guacamole requires it!
  5. Serve immediately
Sulli Says: Naturally vegan and gluten free, this recipe can really be adapted to your tastes.  You can sub out the pineapple, or replace it with another fruit of your choosing.  You can make it more or less spicy, depending on your preference.  Whatever you do, just DON'T add tomato....tomato DOES NOT belong in guac!  Unless of course, you want to add it to yours :)
