Housemade Potato Chips

Serves: 1 Lb. approximately
Prep Time: 30 min. Cook Time: 5 min.
This is more of a method than a recipe.  I decided to do this, so that you could be creative and create your own potato chip flavors at home.
Ingredients
  • 1 Lb. Russet Potatoes
  • Cooking Oil, preferably peanut or canola

You'll also need:
  • Mandolin Slicer
  • Large Pot or Deep Fryer
  • Candy Thermometer
  • Baking Sheet
  • Paper Towels
Directions
  1. Peel Potatoes (Optional)
  2. Using a mandolin or your preferred slicer, slice potatoes to 1mm thick.  This will be the thinest setting you can slice while retaining the potato's shape.
  3. Lay slices on a paper towel lined baking sheet careful not to overlap slices.  Add a layer of paper towel for each new layer of potatoes.
  4. Allow to dry for 30 minutes.  This is how you get crispy, crunchy chips.
  5. Heat 2-3" of oil in a large pot to 360°F
  6. Fry for approximately 3 minutes, using a slotted spoon, keep the chips moving so they do not stick.
  7. Remove and drain, and immediately season with your favorite blend.  Good ol Salt is always great, or spice it up and try something you create!
