Housemade Potato Chips
Serves: 1 Lb. approximately

This is more of a method than a recipe. I decided to do this, so that you could be creative and create your own potato chip flavors at home.

- Peel Potatoes (Optional)
- Using a mandolin or your preferred slicer, slice potatoes to 1mm thick. This will be the thinest setting you can slice while retaining the potato's shape.
- Lay slices on a paper towel lined baking sheet careful not to overlap slices. Add a layer of paper towel for each new layer of potatoes.
- Allow to dry for 30 minutes. This is how you get crispy, crunchy chips.
- Heat 2-3" of oil in a large pot to 360°F
- Fry for approximately 3 minutes, using a slotted spoon, keep the chips moving so they do not stick.
- Remove and drain, and immediately season with your favorite blend. Good ol Salt is always great, or spice it up and try something you create!
