Spicy Pork Fried Rice

There have been times in my life that I subsisted on asian food. And I don't even have to think about my go to order. In fact if you asked some of my favorite Asian joints around Columbus, they could probably tell you my go-to is always spicy, always has roast pork, and is always...fried rice.
In a way they’ve all helped me make this dish... I’m a condiment junky, so I save every soy packet and chili oil cup I get. Free ingredients! Ingredients

Directions
- Combine 6 Cups of Water and 4 Cups of rice in a pot. When the water comes to a rolling boil, reduce heat to low (2-3 on your oven dial) and simmer for 17 minutes.
- Remove rice from pot onto baking sheet. Allow to cool in refrigerator for an hour, or on the counter overnight. (I prefer overnight and I cover with a clean dish towel.)
- Dice carrots, and shallot. Combine with peas and reserve.
- Cut green onion and reserve.
- Mince garlic and grate ginger and combine. Reserve.
- Scramble eggs on low heat (no higher than 4 on your oven dial). Reserve.
- Dice Roast Pork. Reserve.
- You're Ready to Cook! Follow the steps and you'll be done in 5 minutes. AND KEEP THE FOOD MOVING IN THE WOK!!!
- In a wok, on high heat (7-8 on your oven dial) add sesame oil.
- Quickly add garlic and ginger. Season with White Pepper and Five Spice. Cook for 30 seconds.
- Reduce heat to Medium Low (4-5 on your oven dial)
- Add chili oil or red pepper flake depending on your version.
- Add carrots, peas, shallots. Cook for 2 minutes.
- Add roast pork. Cook for 1 minute.
- Add rice and soy sauce. Cook for 1 minute.
- Add eggs. Cook for 1 minute
- Serve hot! It's time to eat.
Sulli Says: As you can tell, prep work is a big part of this dish. If you have everything ready, you can focus on cooking. This is a hot and fast cooking method, if you don't prep ahead of time you will have a burnt rice dish. Trust me, do the prep work!
