Spicy Green Salsa

Serves: 6-8
Prep Time: 25 min.  Cook Time: 15 min.
Green salsa is only green because there's less tomato, combined with green chilies instead of red.  If you prefer a red salsa, adjust accordingly!
Ingredients
  • 2 Ripe Tomatoes (more if you prefer a red salsa)
  • 2 Serrano Chilies
  • 1 Jalapeno Chili
  • 2 Yellow Onions, cut into wedges
  • 6 Garlic cloves, peeled
  • 1/2 Cup Pineapple Juice
  • 1/2 Lime (Juiced)
  • 1/4 Cup Vegetable Oil
  • 1/4 Cup fresh Cilantro, finely chopped (avoid stems)
  • 3 Tsp. Kosher Salt
  • 1 Tsp. Cumin

Directions
  1. Set Oven to BROIL, and move rack approximately 6 inches from broiler.
  2. Line a baking sheet with foil. 
  3. Toss tomatoes, onions, chili peppers in vegetable oil and place on baking sheet.  Roast for 15 minutes.
  4. Place roasted ingredients and remaining ingredients into a blender or food processor and blend.  The goal is to be only slightly chunky.
  5. Taste! And then adjust to your taste, add more chilies if you want a spicier mix, more lime and cilantro for more tang.  And always add more salt if your salsa flavors don't stand out enough.
  6. Serve with chips or on your favorite dish and enjoy!
Sulli Says: I blend my salsa until there are virtually no chunks.  To me, that's how you get all of the flavor in every bite.  As written this salsa is a great way to top chorizo tacos, or as a dip for tortilla chips.
