Directions
- Clean chicken and place in a large bowl. Score each piece so that marinade penetrates the meat.
- Whisk all of the ingredients together for marinade.
- Using resealable bags, add chicken and enough marinade to cover. Marinate for 1 hour to overnight.
- Preheat oven to 425°F
- Add Vegetable Oil to large, hot, Cast Iron Skillet. Sear chicken skin side down until golden. Flip and repeat.
- Cover with foil. Place in oven and cook for 25 minutes or until done.
- Check your coloring, if the chicken needs more color, remove the foil for the last five minutes.
- Garnish with Green Onion and serve hot!
Sulli Says: This method of cooking was great on a day that rained nonstop. I couldn't get outside to fire up the grill, but it will be a summer time staple in my house just like my Jerk Chicken Recipe. If you're grilling, sear the chicken skin side down for 10 minutes at as close to 400°F as you can. Then flip the chicken and cook on a low heat for 20-30 minutes until done.
If there is marinade left over after coating chicken, pour in a sauce pot, add half cup of honey, and whisk. Bring to a boil and reduce heat to low. When sauce has reduced by half, you've got an incredible sauce you're sure you want to make again and again.
