Ultimate Chocolate Chip Cookies

There are a lot of great cookies in the world. And this one is no exception. The toasted peanuts in these cookies create a unique flavor while giving a rich, soft cookie a wonderful crunch in each bite.

- Preheat oven to 375°F
- Place peanuts flat on a baking sheet and toast for 5-7 minutes. Immediately remove and allow to cool.
- Using a mixer, cream together butter and sugars until smooth and creamy.
- Add eggs, one at a time, making sure the first is fully combined before adding the second.
- Add vanilla bean paste.
- Mix flour, baking soda, cornstarch and salt in a separate bowl.
- Combine all ingredients and mix until you have a dough.
- Fold in chocolate chips - do not overwork, just gently fold them in.
- Fold in the toasted peanuts
- Preheat oven to 400°F
- On a lined baking sheet (I use silicone mats), using an ice cream scooper, scoop out 12 cookies being sure to leave room between them. DO NOT pat down your cookies, that just makes for flat lifeless cookies and no one wants that!
- Place your baking sheet in the refrigerator for 30 minutes. This is to ensure a soft, puffed cookie that shows off your hard work.
- Bake for 12 minutes
- IMPORTANT: Do not attempt to move your cookies when they are just out of the oven. They will break apart if you are not careful. Allow them to cool for 10 minutes, then move to a cooling rack to finish cooling.
Sulli Says: I'm not sure why peanuts are always an afterthought in cookies. Everyone seems to opt for walnuts or pecans, and they are great. There's just something about melted chocolate and peanuts and these cookies are sure to help you get your sweet and salty fix!
