"Psych Cinnamon Pie"

I love the show "Psych", in fact a lot of times when I'm cooking I have it on in the background (Thanks Amazon Prime Video!) just to have something to listen to. There are a lot of recipes for a made up pie out there, but none of them really hit it for me. SO I made my own version, and I think you'll love it.

- If using a store bought crust, prepare as instructed on packaging.
- Preheat Oven to 350°F
- In a large mixing bowl or mixer, combine mascarpone and brown sugar. Cream (beat) on high for 5 minutes, pausing to scrape down edges as needed.
- Add eggs slowly.
- At a low speed, add in flour, cinnamon, nutmeg, vanilla bean paste, condensed milk and salt. Work until mixture is smooth and completely combined.
- Pour mixture into pie crust and gently spin so that it levels out and any air bubbles dissipate.
- Bake for 35 minutes. Center will not be set.
- Gently remove from oven and allow to cool on rack completely.
- NOTE: This pie does not need to be served warm. After cooling on a rack, I recommend cooling in the refrigerator for 1 hour to overnight.
- Dust with powdered sugar.
- After slicing, serve with a Whipped Cream
