Vasileía Lamb Burger

If you're a native of Columbus Ohio, you've probably heard of King's Gyros. The owner is a local legend, and you can literally taste the pride and passion in his food. He's also been exceptionally kind to me as I started out this food blog. And he's fed me more times than I can count. I wanted to show my thanks by designing a recipe he would be proud of. Vasileía is a Greek word meaning Royalty. I thought it was fitting to name my lamb burger this way. It's topped with my Greek salad and Greek Dressing. And stuffed with Feta cheese! As Yanni would say. "It's better with flavor!"

- Dice tomato, cucumber, onion & olives. Combine in a bowl with 2 oz. crumbled feta. Set aside.
- Mix Yogurt and Greek Dressing. Set aside.
- Form lamb in to 1/3 lb. patties. Place an indent in the center of the patties with your thumb. This will prevent them from shrinking while cooking.
- Generously sprinkle with seasoning blend.
- In a large cast iron skillet, cook 5 minutes per side on medium high heat. (This will help form a good crust.
- When you flip the burgers, place crumbled feta on top.
- Just before burgers are done, toast brioche buns.
- Working quickly, place burger on bun. Top with tomato mixture and shredded lettuce. Slather top of bun with Yogurt sauce.
- Serve immediately!
