Pollo Asado en Cuarentena

I know that's a really tongue in cheek name, but I literally came up with this recipe while we were all under the 2020 quarantine...
Don't let the name fool you, this recipe was all about self care. I needed to cook to take my mind off being anxious. So I built this recipe using the comforting flavors of my culture, and I couldn't be more happy with it. Salting and air chilling the chicken is critical to the crispy skin on the chicken. Directions
- Pat chicken dry, and liberally salt.
- Place on a wire rack, over a baking sheet and place in the refrigerator for at least 4 hours. (You'll see moisture accumulate in the sheet below. Make sure there's nothing close by, so it can't be contaminated.)
- Remove chicken and allow to come up to temp. This should only take about 15 minutes.
- Season liberally with seasoning blend and set aside.
- Dice carrots, garlic and shallots, set aside.
- Drain beans and set aside.
- Preheat oven to 375°F
- Heat 2 Tbsp. oil in a cast iron skillet over medium heat. (5-6 on your oven dial)
- Brown chorizo for 2-3 minutes and then remove.
- Brown chicken starting skin side down for 2-3 minutes per side. (You're looking for color on the skin here) Remove Chicken
- Add carrots, shallots and garlic and saute for 3 minutes.
- Add chorizo back to pan and add beans. Cook for 3 minutes
- Add chicken skin side up. Gently press it into the beans and vegetables so that it's a part of the dish, but allow the skin to sit above the vegetables
- Add chicken stock.
- Squeeze half lemon over pan.
- Cook in oven for 35 minutes, uncovered
- While the dish is cooking, we need to make the crispy spinach that will give our dish texture.
- Heat 1/4 cup oil in a skillet over medium heat. (5-6 on your oven dial)
- Cook all of the spinach at once, until crispy, when you use a strainer, ribbons should hold their shape, that's how you know it's done.
- Drain spinach.
- Plate beans and vegetables, then spinach, and place chicken on top. Squeeze half lemon over chicken and serve!
